The types of tea are distinguished by their processing. Leaves of Camellia sinensis, if not dried quickly after picking, soon begin to wilt and oxidize. This process resembles the malting of barley, in that starch is converted into sugars; the leaves turn progressively darker, as chlorophyll breaks down and tannins are released. Historically in China, tea is divided into a number of infusions. The first infusion is immediately poured out to wash the tea, and then the second and further infusions are had. Typically, the best temperature for brewing tea can be determined by its type. 這種方法不妥。這種茶本身比較舒展,無需利用水的沖力,反而易燙傷嫩
葉。我採用的方法是,如用玻璃杯,則沿杯邊注水,蓋碗則將蓋子反過來
貼在茶杯的一邊,將水注入蓋子,使其沿杯邊而下。然後微微搖晃茶杯,
使茶葉充分浸潤。
此時茶香高郁,不能品飲,然恰是聞香最好時候。
3) 稍停約兩分鍾,待干茶吸水伸展,再沖水至滿。
